Fruit Pizza

FRUIT PIZZA

1 roll of refrigerated sugar cookie dough

Assorted fruit, such as strawberries, pineapple, blueberries, raspberries, kiwi, grapes, Mandarin oranges

8 oz. block of cream cheese, softened

1 cup powdered sugar

1 tsp. vanilla

1. Heat oven to 350 degrees and lightly grease a round pizza pan

2. Press the cookie dough onto pizza pan (be sure it reaches the edges) and bake until it appears a light golden brown, approximately 15 minutes. Allow to cool.

2. Cream together the cream cheese, powdered sugar, and vanilla until smooth. Spread onto the cooled cookie dough.

3. Arrange sliced fruit on top of cream cheese icing.

4. Slice into "pizza" slices and serve!

*This can also be doubled and placed on a cookie sheet -- a good idea for hungry swimmers and divers!

Emily Bell's Fruit Pizza

The original Lady Lancer's Fruit Pizza recipe! The dough can be more easily manipulated than the refrigerated cookie dough.

Emily Bell's Fruit Pizza

For crust, mix together:

1 package yellow cake mix

2 eggs

1/3 vegetable oil

1 tsp. vanilla

Pat in greased 9" x 12" pizza pan (or double and put in a 12" x 17" sheet pan). Bake for 15 minutes at 350 degrees.  Let cool and frost with the cream cheese mixture.

For cream cheese topping, mix together:

1 1/2 pkgs. softened cream cheese

1 tsp. vanilla

1 cup powdered sugar

Top with:

kiwi, strawberries, blueberries, pineapple, mandarin oranges, star fruit, etc., and chill.

Can also use fresh peaches and bananas, but put on just before serving.
